healthy living in a pixie bento boxes

For the past few months I was kinda busy and hooked on my bento boxes for my lunch.

What’s my reason for bento boxes making?

Simple:  I rushed myself to ER of one of the hospital here in doha due to numbness of my half body and face twitching.

It was an eye opener for me, that I am no longer at the peak of my youthful days, where my body can still pull all nighter and munching chips and dips along side with my pistachio ice cream.

So the doctor even gave me medicine to take for my nervous system and advice me to chill from time to time and avoid stressful stuffs and eat healthy foods and exercise more.

That moment, I thank the Lord above for sparing me again from sickness, I know God used the filipina doctor to remind me that my body is the temple of the holy spirit and I need to be a good steward of the things that God has given me, including my body. I must take care of my food intake and exercise more often, in order for me to do the work that the Lord has mandated me to do. How can I serve Him, if my body deteriorates?

This was the turning point of my bento boxes making, which I now call as pixie bento boxes, pixie means small things/portion. So the question is how do I prepare this boxes of goodness that helped me to achieve my goal of becoming healthy in order to serve HIM more faithfully?

Every time I went to grocery store I always buy variety of fruits and veggies, some of them are in season but most of them are imported here in doha. So I can choose whatever suits my tastes buds.

Here’s my pick for fruits and veggies:

  1. Baby Carrots
  2. Kiwi
  3. Cucumbers
  4. Seedless Grapes
  5. Cherry Tomato
  6. Strawberry
  7. Blue Berries
  8. Oranges

For the main food:

  1. Brown Bread
  2. Tuna
  3. Peanut Butter
  4. Mixed Jelly Spread
  5. Eggs
  6. Chicken Breast
  7. Salmon Grilled
  8. Boiled Egg

If you can see my list of foods, you may think it’s expensive, but if you are looking for future benefits, you can focus later on the payment and your body will thank you later.

So I took the 21 days challenge of making a bento boxes and now I am on my 64th pixie bento boxes. It was really discipline, patience and lots of prayers to prepare this pixie bento boxes.For me I ate this during lunch and from time to time I have a cheat day, that will be during my off day as to not to deprive myself of eating rice.For breakfast, I always eat oatmeal packed with strawberries and grapes. Mostly for dinner tuna sandwich or oatmeal again.

Bean Curd Sautee

Honestly, I am a frustrated chef wanna be… due to money restrictions my family can’t afford to let me enroll in one of the culinary arts school but I am blessed that I graduated from engineering and I am thankful and forever grateful to my biological father and heavenly father  for leading me on this profession.

So back to cooking, my father bought a bean curd commonly known as “tofu”. So I told him I’m going to cook it for him. I try to tell him it will be like sautéed one where vegetables will be abundantly used. When he heard the word “abundantly” , he let me prepare the ingredients, so here are the ingredients:

  • 1 14 oz Tofu Extra Firm and cut into cube size
  • 1 Carrots
  • 1 small green bell pepper
  • 1/2 cup broccoli
  • 1 Carrot chopped
  • 1/2 cup snow peas
  • 1 clove minced garlic
  • 1 big onion chopped
  • 1/2 cup garlic chopped
  • 1/2 cup ginger chopped
  • 1 tomato chopped
  • 2 Tablespoon Osyster sauce
  • Salt to taste
  • 2 Tablespoon Olive Oil


1. Blanched carrots,snow peas,and broccoli in a boiling water for a minute and take it out and set aside.

2. In a wok pan, heat the olive oil and  saute onion and garlic and cook in one minute.Add in the ginger and continue stirring until cooked.Stir in tofu and cook until golden brown and set aside.

3. Add carrots,bell pepper,and snow peas and continue stirring for 1 or 2 minutes and add in the oyster sauce and add 1/4 cup of water and salt to taste and cook for about 1-2 minutes and set aside. Garnished the broccoli and served.

So that’s how I cooked this stir fry tofu, and it’s a thumbs up for my father and some of my housemates. I encourage you to try this recipe and I am sure you will truly enjoy a very healthy meal.

fry me like one of your french toast

Last week, I have a chance to recreate one of the easy recipe from this blog site: http://Create%20Eat%20Happy%20Blogspot%20

After my thursday work, I went to grocery to shop for the following ingredients:

  • 1 Egg
  • 180 ml Strawberry Milk
  • Butter
  • Nutella
  • 1 Tbsp Sugar


  1.  Mix egg,milk and sugar in a bowl and set aside.
  2. Spread the nutella on the sandwich.
  3. Soak the sandwich on the mixture until it is fully soaked.
  4. Melt the butter in the frying pan.
  5. Fry the sandwich on both sides on low fire.
  6. Slice and Serve and place butter on top of the sandwich.

When I first tasted it,I was like, did I really made this? It was so addicting … that I end up cooking another batch for my father. Actually you can try other spread aside from nutella. I wanna try also speculoos but unfortunately, it’s not available here in Doha. Hopefully when I moved to where God wants me to settle, speculoos will be abundant in that country.

I highly recommend this for all the mom out there to try making one for your kids and put an ice cream, I’m quietly sure your kids will love this and you can also ask his/her help in making one because this will be a good chance for both of you to bond and share stories over this french toast nutella.

she’s into steaming

After a couple of months, contemplating and being stressed out because of the filling of my papers for immigration purposes, I finally had a chance to exercise my hidden skills in baking.

I learned baking cakes,cookies and all pastry stuff when I was still in high school and thanks to my mentor I still have good hands to fold and cut mixtures for pastry making. Enough of that, due to lack of oven in my flat, I’m using steaming
method for the moment. In God’s time I will be able to have my own oven.

Last thursday, I bought the needed materials for my steamed rice cakes..

So let’s start steaming:

Here are my ingredients:

4 Cups  Rice Flour
3 Cups Sugar
2 1/2 Table Spoon Baking Powder
2 1/2 Cups Water
2 Cups Coconut Milk
1/2 Cup Butter
1 Egg
Cheese Toppings
Food Coloring ( optional)

  • Prepare the rice cooker steamer for steaming purposes. Put water on the rice cooker and click cook and let the water boil for 20 minutes.

Here’s the procedure for the mixture:

1. Prepare a mixture bowl and sift the dry ingredients and mix them together.
Dry ingredients includes

  •     4 Cups  All Purpose Flour
  •     3 Cups Sugar
  •     2 1/2 Table Spoon Baking Powder

2. Then after mixing the dry ingredients, put the wet ingredients together and mix thoroughly. For the butter, melt them first using frying pan or microwave.
Wet ingredients includes:

  •     2 1/2 Cups Water
  •     2 Cups Coconut Milk
  •     1/2 Cup Butter
  •     1 Egg

3. Mix them thoroughly until you have a smooth mixture. Separate the mixture in different bowls, this is in preparation for coloring it. I used blue and green for this recipe.Mix until the desired color is meet.
4. Now prepare your molding cups. I brushed some oil on the molding cups so as to avoid sticking the molding cups  after steaming.
5. Pour out the mixture in molding cups. And put them one by one on the steamer rice cooker and so the steaming begins.
6. After 20 minutes, check your steamed steam rice cake , put in the sliced cheese on top of the steam rice cake and leave for 5 more minutes.
7. Once steam rice cake is cooked, remove the steamed steam rice cake  from the steamer and let it cool aside for 5 or 10 minutes.
8. Remove from the silicon molder and your steam rice cake is now ready to serve.

This is my first time making the said steamed rice cakes and the taste is good because I have it taste tested by my father and other housemates as well as my vg mates.

Finally, I’m back on track. Now I’m planning to complete my baking utilities. I thank the Lord God above for providing me wisdom and provision for making foods and be able to share this blessings I have with me.

Somebody asked me, if I planned on making a fortune out of this. I told them, I’m in the process of sharing for the moment.
But if God wills and allows it, then Let His will be done.
